Abstract
Our aim is to increase public access to the European cultural heritage - the culinary culture developed in Cistercian monasteries and monastic landscapes - and the long-term active participation of the public in the creative use of this cultural heritage.
Why the Cistercians, whose monasteries can still be found throughout Europe? This order did not only benefit the soul... but, thanks to basic principle of "Ora et labora" and the economic rules of the order, cultivated the local landscape and sought maximum raw material self-sufficiency. And this was reflected on the plate… Did you know that they used to have 7 kinds of meat on the festive table? And wherever they introduced wine cultivation as they expanded across Europe?
Thanks to the project, the original recipes and their modern forms will reach the public. We will publish a printed and electronic cookbook. A publicly accessible comprehensive database of the "gastrosophie" of historical recipes and their modern versions will be created, which will be prepared in the form of experiential events (9) in collaboration with eminent gastronomists, students and interested members of the public (700 pers.). Research on historical sources will form the basis.
We will show the audience what it was like in monastery kitchens and dining rooms by means of 3D visualisations of the interiors of monasteries; these models will then be used by the public and schools for education through the international network CISTERSCAPES, nominated for the European Heritage Label.
We will use friendly modern technologies and social media to make our cultural heritage accessible, and we also place emphasis on experiential form and organizing events for the public. Real creative use of culinary heritage is key for us, as well as networking organisations at European level, using local resources.
At the same time, cooperation with the public will put the project's outputs into an upward spiral, long-term growth and expansion of its own energy!

Cisterciácké kulinářské kulturní dědictví se představí prostřednictvím Kreativní Evropy
Výzvu programu Kreativní Evropa 2021+ využili členové mezinárodní sítě cisterciáckých klášterních krajin CISTERSCAPES k podání společné dotační žádosti – projektu „Culinary Heritage of the Cistercians in Central Europe“.
Odborným partnerem projektu se stala Paris Lodron University Salzburg, katedra Historie/ Gastrosophie.
Cílem projektu je zprostředkovat cisterciácké kulinářské kulturní dědictví současnému publiku. Tomu odpovídají i prostředky, které jsme zvolili – hlavní roli samozřejmě hrají smysly!
Projekt není ”jen o jídle”, ale o inspiraci, jak využívat dávno zapomenuté recepty a informace v dnešní moderní době, jde o návrat ke kořenům. Zájemci z řad veřejnosti se budou moci zapojit do reinterpretace starých receptur a zážitkových kulinářských akcí. Vznikne online databáze receptur i unikátní kuchařská kniha, která provede čtenáře napříč středoevropskými cisterciáckými klášterními krajinami, dokumentární film i 3D modely a vizualizace klášterních kuchyní a refektářů. Výstupy projektu se stanou vynikající prezentací sítě CISTERSCAPES pro širokou veřejnost!
Kulinářské kulturní dědictví cisterciáckých klášterních krajin současně pomůže reflektovat moderní environmentální témata, především využívání místní produkce a snahy o lokální potravinovou soběstačnost, které byly pro cisterciáky vždy typické.
Žádost o dotaci z fondu malých projektů spolupráce uspěla v programu Kreativní Evropa 2021+, projekt bude realizován v letech 2023-2025 konsorciem 3 partnerů - MAS Rozkvět (CZ), Paris Lodron University Salzburg (AT) a Landkreis Bamberg (DE) - a přidruženými partnery působícími v rámci sítě CISTERSCAPES nominované na označení European Heritage Label.
Zahájení realizace projektu: březen 2023.

Cistercian culinary heritage to be showcased through Creative Europe
Members of the international network of Cistercian monastic landscapes CISTERSCAPES have used the call of the Creative Europe 2021+ programme to submit a joint grant application - the project "Culinary Heritage of the Cistercians in Central Europe".
Paris Lodron University Salzburg, Department of History / Gastrosophie, was the expert partner of the project.
The aim of the project is to bring the Cistercian culinary heritage to a contemporary audience. The means we have chosen are in line with this - the senses play a major role, of course!
The project is not "just about food", but about inspiring how to use long-forgotten recipes and information in today's modern age, it is about returning to our roots. Interested members of the public will be able to participate in the reinterpretation of old recipes and experiential culinary events. There will be an online recipe database and a unique cookbook that will guide readers through Central European Cistercian monastic landscapes, a documentary film and 3D models and visualisations of monastic kitchens and refectories. The outputs of the project will become an excellent presentation of the CISTERSCAPES network for the general public!
At the same time, the culinary cultural heritage of Cistercian monastic landscapes will help to reflect modern environmental themes, especially the use of local produce and the quest for local food self-sufficiency, which have always been typical of the Cistercians.
The application for funding for the small-scale cooperation project has been successful under the Creative Europe 2021+ Programme; the project will be implemented between 2023 and 2025 by a consortium of three partners - MAS Rozkvět (CZ), Paris Lodron University Salzburg (AT) and Landkreis Bamberg (DE) - and associated partners operating within the CISTERSCAPES network nominated for the European Heritage Label
The project started 03/2023.

Das kulinarische Erbe der Zisterzienser wird im Rahmen von Creative Europe vorgestellt
Die Mitglieder des internationalen Netzwerks der Zisterzienser-Klosterlandschaften CISTERSCAPES haben den Aufruf des Programms Kreatives Europa 2021+ genutzt, um einen gemeinsamen Förderantrag einzureichen - das Projekt "Kulinarisches Erbe der Zisterzienser in Mitteleuropa".
Die Paris Lodron Universität Salzburg, Fachbereich Geschichte / Gastrosophie, war der fachliche Partner des Projekts.
Ziel des Projekts ist es, das kulinarische Erbe der Zisterzienser einem modernen Publikum näher zu bringen. Die Mittel, die wir gewählt haben, stehen im Einklang damit - die Sinne spielen natürlich eine große Rolle!
Bei dem Projekt geht es nicht "nur" um Lebensmittel, sondern darum, zu inspirieren, wie man längst vergessene Rezepte und Informationen in der heutigen modernen Zeit nutzen kann, es geht um die Rückkehr zu unseren Wurzeln. Interessierte Bürgerinnen und Bürger können an der Neuinterpretation alter Rezepte und an kulinarischen Erlebnisveranstaltungen teilnehmen. Es wird eine Online-Rezeptdatenbank und ein einzigartiges Kochbuch geben, das die Leser durch mitteleuropäische Zisterzienserklosterlandschaften führt, einen Dokumentarfilm sowie 3D-Modelle und Visualisierungen von Klosterküchen und Refektorien. Die Ergebnisse des Projekts werden eine hervorragende Präsentation des CISTERSCAPES-Netzes für die breite Öffentlichkeit sein!
Gleichzeitig wird das kulinarische Kulturerbe der zisterziensischen Klosterlandschaften dazu beitragen, moderne Umweltthemen widerzuspiegeln, insbesondere die Verwendung lokaler Produkte und das Streben nach lokaler Selbstversorgung mit Lebensmitteln, die für die Zisterzienser schon immer typisch waren.
Der Antrag auf Finanzierung des kleinen Kooperationsprojekts war im Rahmen des Programms Kreatives Europa 2021+ erfolgreich; das Projekt wird zwischen 2023 und 2025 von einem Konsortium aus drei Partnern - MAS Rozkvět (CZ), Paris-Lodron-Universität Salzburg (AT) und Landkreis Bamberg (DE) - und assoziierten Partnern durchgeführt, die im Rahmen des für das Europäische Kulturerbe-Siegel nominierten CISTERSCAPES-Netzwerks tätig sind.
Das Projekt soll im 03/2023 anlaufen.
